Apple And Banana MuffinsApple, Banana & Honey Muffins

Prep Time: 15 minutes
Cooking Time: 30-35 minutes

Ingredients:
- 1 cup of dates, pitted and roughly chopped
- ½ cup honey
- ½ tsp bicarbonate soda
- 2 green apples, grated
- 3 small ripe bananas, mashed
- 2 oranges (zest and juice)
- 3 cups wholemeal flour, sifted
- 50g walnuts, chopped

Method:
1- Preheat the oven to 180C (160C fan forced).
2- Lightly grease a 12-hole muffin tin with Natural Alternative Olive Oil. Put the dates, honey and bicarbonate soda in a saucepan and stir over medium heat until well combined.
3- Remove from the heat and set aside to cool.
4- Transfer the date mixture to a mixing bowl and add the apples, banana, orange zest and juice, mix well.
5- Fold through the wholemeal flour and walnuts. Spoon the mixture into the prepared muffin tin.
6- Bake for 30-35 minutes. Cool before turning out onto a cooling tray.
7- Wrap in foil for school lunch boxes or as an after school snack.
